These are soooo tasty – the natural sweetness of the sweet potato means that very little sugar or sweetener is needed (I used a little coconut sugar but any kind will do). And because sweet potatoes are naturally moist, the brownies have a lovely gooey texture. The best bit though? Because sweet potato is so high in fibre, you will struggle to eat more than one (ok, two) of these at once. Which is not the case for real chocolate brownies..
