These individual little Cottage Pies are the ultimate in healthy comfort food. Potato has been replaced with lower-carb cauliflower cooked with garlic, butter and cheese and I used super-lean Piedmontese mince.
Tip: instead of going to the trouble of grating or food processing a whole cauliflower, you can buy ‘cauliflower couscous’ in Tesco and the size of the container just happens to be perfect for this recipe.
Another tip: these little cottage pies freeze very easily – you can even cook them from frozen.
