This dish is so quick and easy: if you take the lazy smart option you don’t even have to bother chopping anything! I used frozen chopped garlic and ginger, spiralized carrot and cauliflower couscous (all bought from my local Tesco).
Yes it may seem a little lazy, but it can’t be just me who fills up the fridge with fresh vegetables which I then forget to cook and end up guiltily throwing them away weeks later (by which time they are mouldy).
Make sure you have everything all ready and right next to you by the time you start cooking and this whole dish will be ready in less than 10 minutes.
