I love a good spaghetti carbonara. But I don’t make it very often because it’s not the healthiest of meals (bacon + cream + pasta…no wonder it tastes so good).
But this healthier version is something which I do plan to make often. Without the heavy spaghetti, the dish becomes so much lighter (in fact, check out the nutritional values below, it is almost carb free!) I used turkey bacon rather than pancetta which works really well and again is very light. But of course, you can use regular bacon if you want.
Be sure to watch the video above and follow the instructions carefully as it can be quite tricky to thicken the sauce without overcooking the courgette.
